Vegan Avocado Chocolate Brownies

Instead of thinking ‘guacamole’ next time you buy an avocado, think chocolate!

Let me be honest with you, I’m lazy. My closest market is a 5-minute walk away but sometimes that’s just too far.

Not only do I run out of milk & eggs fairly quickly, but both are a bit expensive to replace often (~$4 each). Surviving without milk is easy. Running out of eggs, however, puts a dent in my baking production.

To solve this problem, and to allow laziness to rule my life, I began using vegan recipes.

My trick for baking without eggs is to mix the flour & water first. This mixture forms gluten, which acts as a binding agent. If you’ve had problems with the consistency of vegan baked goods before, try this next time.

For this recipe I used avocado, but you can also use applesauce or bananas. The flavor comes through mildly and all of these work well at holding everything together.

Vegan Avocado Chocolate Brownies

Avocado de-pitted


  • 1 avocado mashed
  • 1 1/2C water
  • 1 1/2t vanilla
  • 1C sugar
  • 3/4C cocoa powder
  • 2C flour
  • 1 1/2t baking powder


  1. Mix the dry ingredients (cocoa powder, flour, baking powder)
  2. Mix the wet ingredients (avocado, water, vanilla, sugar)
  3. Stir the dry into the wet slowly
  4. Optionally add chocolate chips or cayenne

Bake in greased 9×9 pan at 325 degrees for 40 minutes


These come out rich, fudge-like and very thick with clean edges. Some vegan brownies have a crumbling problem – these don’t. The avocado flavor does not come through, if that is something you’re worried about. Be sure to mash the avocado up very well or you will see little bits as you’re eating.

  1. Those look awesome! I keep meaning to try avocado but haven’t found a recipe that looks worth my time yet. I will definitely keep this one bookmarked for the next time I want brownies!
