Recipe: Quick & Easy Week-Day Tuna

Lunch is the only meal of the day that I try to plan ahead for, just to make sure I always have something to eat (since I don’t go out for lunch).

I found canned tuna on sale at my local grocery store last week because I thought it would make a good lunch. It did. However, I wanted to do something a little extra than just the tuna+mayo combo my parents fed me growing up. The result was delicious!

What To Do

Empty 1 can of tuna into a small bowl. Stir in 1 spoonful (a normal eating spoon) of mayo, a couple squirts of mustard (I used spicy brown), chopped onions & celery (or onion & celery salt), and a grind of black pepper. Then just eat it as a sandwich on wheat bread or as a wrap in a tortilla.

This is easy for a work lunch. Just put the tunafish in one container, and your bread in another. It only takes a minute to assemble and about 5 to actually make the tunafish mixture at home.
